Heath Sparkling Wines, the first Texas winery devoted solely to sparkling wines, is now open to the public! The new winery in Fredericksburg produces four vintage sparkling wines: Euphoria, Adoration, Ebullience and Blanc de Blancs. All the wines are created using the traditional French Méthode Champenoise (with secondary fermentation in the bottle and sur lie aging).
A Contemporary Wine Tasting Experience
Heath Sparkling Wines’ contemporary architecture features steel, glass and concrete, is unusual in the Hill Country. The intimate tasting rooms, with floor to ceiling windows overlooking the Hill Country vineyards, have been designed to create the ambiance of a private tasting. The winery’s guided wine tasting experiences will be unique as well. According to owner Brian Heath, “It’s an immersive tasting experience…” During the tasting, the four vintage Sparkling Wines will be paired with culinary bites that complement the different characteristics of the wines. Each server will be responsible for his or her individual section, and will be able to tailor the on-demand virtual tour to match guests’ different interests. The virtual tour will even include drone photographs of all the vineyards from which grapes are sourced.
Four Vintage Sparkling Wines
The winery’s 2015 and 2016 vintages are currently available. These vintages include Euphoria and Adoration. The 2017 vintage, including all four sparkling wines, will be released in the tasting room later in 2019.
- Euphoria is Chenin Blanc-focused brut sparkling wine.
The 2015 vintage was produced with 50% Chenin Blanc and 50% Muscat Canelli. The winery describes the vintage having “a lively effervescence, showcasing a well-balanced, refined finish.”
The 2016 Euphoria combined 49% Chenin Blanc, 44% Viognier, and 7% Muscat Canelli. This vintage is characterized as “classic and austere” with “lots of sparkle and bright acidity that yields a round, lingering finish.” - Adoration is a brut sparkling rosé featuring Texas Pinot Noir.
The 2015 vintage is 100% Pinot Noir. The winery describes this wine as richly textured, pomegranate in color, and having “aromas and flavors of cherry, raspberry, cranberry, and red plum”.
The 2016 Adoration combined 57% Pinot Noir with 26% Pinot Grigio and 17% Cabernet Sauvignon. The peach-hued wine has “delicate aromas of candied strawberry, dried cherry, cranberry, and red carnations. Medium-high acidity provides great structure for a brisk, clean finish”. - The winery describes Ebullience as a “copper colored…Pinot Grigio…[that] highlights the vineyards’ High Plains Texas heritage.”
- Blanc de Blanc is a “traditional Champagne presentation of Chardonnay with a velvety texture and floral notes.”
