While wine is stored in oak barrels during the fermentation and aging processes, the barrels can have a large impact on its resulting color, flavor, texture, and style. The barrels’ permeable elements also provide for evaporation and oxygenation to occur in the wine, which allows the wine’s flavor, aroma, and tannins to settle or soften. The cork too helps with the aging process and allows the wine to meet with the oxygen.
